Oh Lord, I can finally see the end! The floors are going in starting tomorrow and last round of inspections start on Monday. Everyone I have asked who has opened a restaurant all says the same thing and that is that it took them twice as long as they expected and three times more money. Opening a restaurant is definately not for the faint of heart!
I have made a checklist on the white board for each day and that is making feel now like this is really going to happen. Lots of other things going on super great things but I have been told I can't talk about it. Now if you know me, you know that this is next to impossible. I have to buy Christmas gifts the day before so I don't give them to the person. LORD... HELP ME!!!
I promise the details and news is so super cool and amazing you won't believe it! Ok, I have to stop or I will tell you!

Are we there yet? SOOOOOONNNNN
I have to say this has truly been one of the biggest challenges of my life. Each week brings a new hurdle but we find the skill and strength to get over it. Our chef Joel had me watch a short video on the web called The Butterfly Circus. It was a short film that I finally watched and so glad I did. The message was that those with the greatest struggles have the advantage because theirs is the greatest reward. Much like the caterpillar working its way out of a cocoon. You have to watch it, it really isn’t about butterflies. When it is all said and done, we will be stronger and wiser for sure.
We have the computer system (POS) being installed Friday, floors installed on Saturday and then we just wait for final inspections so we can open the doors. I have truly found that opening a restaurant is a very unpredictable venture. This is not an easy task for someone like me who likes things black and white. I want to know when and where and it just doesn’t work that way when dealing with so many different government agencies. I am reminded of the fish Darla in Finding Nemo “just keep swimming, just keep swimming”.
Thanks to our employees for your patience during this process and for our friends and family who love and support us even on the days we are not so worthy of it.
